Recipe: Butterflied Herb-Roasted Chicken with Root Vegetables
Ingredients:
- 1 whole chicken, butterflied
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- 4 medium-sized carrots, peeled and cut into chunks
- 2 parsnips, peeled and cut into chunks
- 1 large sweet potato, peeled and cut into chunks
- 1 onion, cut into wedges
- 2 tablespoons balsamic vinegar

Preheat your oven to 200°C.

In a small bowl, mix together 2 tablespoons of olive oil, minced garlic, chopped rosemary, thyme, parsley, salt, and pepper to create a herb-infused marinade.

Place the butterflied chicken in a large baking dish and rub the herb marinade all over it, ensuring it is evenly coated.

In a separate bowl, toss the chopped carrots, parsnips, sweet potato, and onion wedges with the remaining olive oil, salt, and pepper.
