2022 Sauvignon Blanc with Herb-Roasted Chicken and Root Vegetables

Recipe: Butterflied Herb-Roasted Chicken with Root Vegetables

Ingredients:

  • 1 whole chicken, butterflied
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 4 medium-sized carrots, peeled and cut into chunks
  • 2 parsnips, peeled and cut into chunks
  • 1 large sweet potato, peeled and cut into chunks
  • 1 onion, cut into wedges
  • 2 tablespoons balsamic vinegar

Instructions:

    1. Preheat your oven to 200°C.

    2. In a small bowl, mix together 2 tablespoons of olive oil, minced garlic, chopped rosemary, thyme, parsley, salt, and pepper to create a herb-infused marinade.

    3. Place the butterflied chicken in a large baking dish and rub the herb marinade all over it, ensuring it is evenly coated.

    4. In a separate bowl, toss the chopped carrots, parsnips, sweet potato, and onion wedges with the remaining olive oil, salt, and pepper.

    5. Arrange the seasoned vegetables around the butterflied chicken in the baking dish.

    6. Drizzle the balsamic vinegar over the chicken and vegetables.

    7. Roast in the preheated oven for 45-50 minutes, or until the chicken is golden brown and cooked through, and the vegetables are tender and caramelized.

    8. Remove from the oven and let it rest for a few minutes before serving.

    9. Carve the butterflied chicken into serving portions and arrange on a platter with the roasted root vegetables.

    10. Serve hot alongside a glass of our 2022 Sauvignon Blanc for a memorable winter pairing.
