Recipe: Red Wine Braised Beef Short Ribs
Ingredients:
- 4 beef short ribs, bone-in
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup 2019 Cabernet Merlot wine
- 2 cups beef broth
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 2 bay leaves
- 2 tablespoons tomato paste
- Mashed potatoes or creamy polenta, for serving
- Chopped fresh parsley, for garnish
Instructions:

Preheat your oven to 160°C.

Season the beef short ribs generously with salt and pepper.

Heat the olive oil in a large Dutch oven or ovenproof pot over medium-high heat.

Add the beef short ribs to the pot and sear on all sides until browned, about 3-4 minutes per side. Remove the ribs from the pot and set aside.

In the same pot, add the chopped onion, carrots, celery, and minced garlic. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.

Deglaze the pot with the 2019 Cabernet Merlot wine, scraping up any browned bits from the bottom of the pot.

Stir in the beef broth, fresh rosemary, fresh thyme, bay leaves, and tomato paste.

Return the beef short ribs to the pot, nestling them into the liquid.

Cover the pot with a lid and transfer it to the preheated oven.

Braise the beef short ribs in the oven for 2.5 to 3 hours, or until the meat is tender and falling off the bone.

Remove the pot from the oven and discard the herb sprigs and bay leaves.

Serve the beef short ribs hot over mashed potatoes or creamy polenta, spooning the rich sauce over the top.
